A Traditional Balsamic Vinegar of Modena is protected by the D.O.P., or Protected Designation of Origin. This vinegar is made by the traditional method of aging cooked grape must in casks of different types of woods for many years. This long and slow process creates an exceptional and complex addition to your meal.

The "Vecchio" is aged for a minimum of 12 years and has the strongest vinegar taste of the traditional balsamics. Ideal for fish, vegetables, marinades, salads and as a finish for cooked meats and pastas.
